Almond Pie Crust

 

Serving Size: 1 pie crust (approximately 8 servings)

Ingredients:

  • 2 cups blanched almond flour (fine, not meal)
  • 1/4 tsp salt
  • 2 tbs coconut oil (melted) or unsalted butter (room temperature)
  • 1 large egg

Optional Add-Ins:

  • 1/4 cup monk fruit sugar (or other low glycemic sugar equivalent) for dessert pie crusts

Directions:

  1. Place flour and salt in food processor and pulse briefly
  2. Add coconut oil (or butter) and egg and pulse until mixture forms a ball
  3. Roll until round to fit, or press dough into a 9 inch glass pie dish
  4. Bake at 350°F for 8-12 minutes (if being used with non-baked filling)
